In the previous
experiment brown bromine was extracted from water by liquid hexane.
The yellow colour of butter and margarine comes from dissolved dye of carots
= carotin.
What
you need: Two injection
bottles, one with water, the other with colourless fatty oil, a grinded
carot.
Experimentleft
and photo 2:
* Colourless oil (Becel) and water are transferred into the bottles. Photo
3: Add grinded carot, close by a stopper and leave one day.
Observation:
A yellow solution has formed in Becel
oil. The water has become turbid.
Explanation:
Carotin, the yellow colour
of carots has dissolved in the fatty oil as the molecules of carotin resemble
those of fat. Model of a fat molecule = right photo:
Three chains made of hydrogen and of carbon atoms can be seen. Beta-Carotin
is a hydrocarbon (C40H56).
There is a rule saying: "Substances
of like structure dissolve each other well".
